Mark an Order as “Unpaid”

We are helping a customer manage a Woocommerce store. They create orders manually for the customer and then send them them to their account to pay.
When an order is placed the status is “Payment Pending” and the order is marked as “unpaid”. If this order accidentally gets marked as “Processed” the order is marked as “paid”. We can change the order status back to “Payment Processing” however the order is always marked as paid at the time of the original error. I can not find anyway to mark the order as “unpaid” or remove the “paid” status.
Putting the order back into “Payment Processing” allows the user to access the payment screen in their account. However payment will never be successful because the order has already been marked as “paid”.
How can we remove the “paid” status of the order when an order is changed to “Payment Processing”?Thanks
