META DESCRIPTION TEMPLATE: if not set, pages won’t have any Meta description ?

If you don’t select a meta description template or set a specific meta description with the Yoast SEO plugin, then it won’t output it in the page source metadata. Google will then try to output in the search results what it believes would be the most descriptive or fitting content of that page. We don’t recommend that you leave this blank.

can you tell me when are meta tags added to my page if I install Yoast AFTER having created the pages ?

I just went to yoast options and told to add %%excerpt%% to all pages.
Does yoast add the meta description to all my pages instantly, or next time when they are updated ?

Or does yoast add the metatags everytime a page is viewed ? (so what if I have a cache and the pages were already in cache before I installed yoast?).
