Migrating to new site but with new theme and pages

I’m migrating a WordPress site to a new one and creating a new layout with a different theme, Elementor and different pages.

I need to migrate Woocommerce products using a multivendor system over to the new site, which will include products, postmeta, media, vendor/user info etc.

I’ve used a couple of methods to copy products over but it either misses parts of the product information, or it wipes out the vendor info.

Has anyone successfully moved a site over to a new theme and pages without losing either old or new data?
