I guess I Will have to go with the Actionable Analytics plugin.

In my first post of this thread I’ve mentioned this one:

As you can see, this plugin is for Google Analytics, not Google Tag Manager.

So, I guess that I’ll have to go with that one, and delete the Analytics tag from my GTM account.

I understand your frustration and your disappointment, I was not here to help you with this issue. I know this might be not the right answer to you but I had a very busy end of year at my work and I wanted to spend the holidays with my family.

I did some testing yesterday with WP 5.0.2 and WC 3.5.3 and I can still see ecommerce data on the thankyou page on my testing site:
