    I’m running 2014 with the default WordPress mobile theme active. I’m assuming I should leave this active when in install this plugin correct?

    Yes. AMP currently only applies to posts. To get mobile-friendly versions of non-posts, you’ll want to have a mobile theme, or better to have a theme that is mobile-friendly to start with.
