Modify WooCommerce email template

The WooCommerce email notifications including “New order” to the merchant and “Processing order” to the customer are pulling the customer name, address, phone and email from a common external file somewhere. In fact, there seems to be layers of pulling code from other files in some cases (this pulls from that which pulls from another — for instance, in “Processing order” there’s a phrase $address” that seems to be involved).

I don’t like the fact the customer’s billing and shipping addresses, phone and email end up appearing in italics in those various emails. I want to remove the italics format, and I want to do it in the original source file that initiates that formatting downstream to those other files.
