Most recent video post, with thumb and specific excerpt

Hi Guys I would really love it if someone could please help.

Site i am working on is https://www.myeverestchallenge.com/ and on the Right hand side I am looking to display the most recent post in the Video Category, with a thumbnail for that post, the post title (to replace LATEST VIDEO) and below that display a small two lined excerpt from the post itself.

Any help would be great, i have tried working with plugins but cant get any of them to work the way i want.
