Moving hosting to a single server

I have 3 wordpress blogs with Godaddy, and I’m out. Yay for elephants, no to SOPA etc.
eagleapex.com
valeriakremser.com
familyabeyance.com
They are each on their own shared hosting and own DB.
I want to move them to a new hosting plan somewhere else. Is this the correct procedure?

1. get ssh, scp on new account
2. get all the files from old to new server and into sub directories
3. merge all the wp files and wp_contant stuff (form the same version) into one wp install folder on root
4. not quite sure what’s next, edit wp_config? plugin?

I’d like to hit upgrade once for all three sites, and maybe add another someday.
I search, but didn’t find much.
