MySQL eventually using 100% of memory

Hi –
We have a site on a dedicated server and are having to reboot the machine every few days or it hangs. Machine details are:
Memory: 4033496k/4980736k
Intel(R) Core(TM)2 Duo CPU E4600 @ 2.40GHz stepping 0d
Brought up 2 CPUs
CPU: L2 cache: 2048KWP vers 2.7.1
Plugins:
Dagon Design Form Mailer
Google XML Sitemaps
My Page Order
TinyMCE Advanced
WP Post Columns
WP Super CacheThe site gets about 5500 visits a day. It consists of 593 pages, no posts. The url is https://golfclubatlas.com
What would be the ideal system requirements for a site like this? Is 4 gig RAM not enough? What about the processors? Sometimes I see CPUs fully utilized, too.
Where do I start looking? I’ve disabled all plugins to see how the site runs, but see no better performance. It does run better with WP Super Cache.
My my.cnf file is the default one installed with MySL on CentOS.
If anyone has any suggestions, I would be grateful.
