How do I do that? I combed through all of the settings and couldn’t find how to use the dual calendar setting.

Please go to the Product edit page>> General settings>> Book type select the dual calendar.
After that please set the availability settings according to your need.

Please make sure that you have set the availability settings For this go the plugin settings>> Configuration settings>>Availability settings.
Set the availability time then only it will show the booking form.
