Need countywide categories & sorting

This is not possible without modifying the code yourself.

There is already a country_iso field in the db table, so you could run an sql query through those fields and show the unique values in a dropdown. Then include the value in the ajax request and then in the wpsl-ajax-functions.php include the country_iso value in the query.
