Responsiveness for tables is tricky, as tables will indeed resize, but they will only do that until they reach their minimum width, which is determined by the content in them (e.g. long words cause wide columns).
A common approach to counter this is to flip the table to the side and make it scrollable, which is e.g. possible with https://tablepress.org/extensions/responsive-tables/
As this approach will only really work with data tables, another appraoch could be to only add horizontal scrolling (without the flipping), which is possible with https://www.ads-software.com/support/topic/responsive-tables-scroll-only?replies=6#post-5511954
As these approaches are very specific to a site (depending on what a user wants to achieve), they are not part of TablePress itself, but need to be applied separately.
