Relevanssi doesn’t leave any posts unindexed without a reason, so if all the products are not indexed even though that is how you’ve setup things, that means there’s a problem somewhere. It can be a conflict with another plugin (some ACF fields can cause indexing problems, for example).
Sometimes everything is indexed, but the search has some problems. It’s also possible that the indexing and searching works correctly, but your theme –?particularly an AJAX search – does not use Relevanssi.
