Not sending confirmation letter

Since 2.0 Registration Default Role added to the Settings. (Ultimate Member > Settings >Appearance > Registration Form)

The Registration Default Role role value is set to default. Since you can’t set Registration options for default. It accepts all the registrations without any review.

So Change the default role to Member ( Ultimate Member > Settings >Appearance > Registration Form > Registration Default Role ) and save the changes.

Change the role to Subscriber or any role. Role that you want your newly rehistered users to have.

Then set the Subscriber roles settings from Ultimate Member > User Roles > Subscribers.

I tried to do as you said. Changed the default role to Subscriber (see the screenshot with the steps: https://drive.google.com/file/d/1f8w7NUlpOqxcOoCJLBjJvjsZdaDQkCAL/view?usp=sharing).

After that I registered 2 users with different emails. No confirmation letters came.

Please try installing an SMTP plugin to resolve the Email relay issue.
