Not update name if exist

I regret to say this is not possible. If you set the form to “Update existing Users”, then all details will be updated.

And is it possible, in another text type field, to add and not replace the content?

I assume you have a single form. So in that form any fields you have, if the user already exists but the 2nd submission contains different data then this would be updated.
