Also, when using the filter, is it possible to default to one category initially? I need to show 3 categories, but only want posts to display one category at a time, and never to show ‘all’.

Then you can hide show_all button and select the category terms which you want to show.

I am already hiding the ALL button and have selected the category terms I want to show. What I was asking was, how do we default to one of those categories on the initial load, rather than showing ALL categories initially.

Also, Is there a way to display the tax terms like category or tag on the grid item? If not, that would be useful too, as well as being able to choose what items in the grid you want to display (image, Title, category, tag, excerpt, read more link, etc.) and even better, to be able to order those things so that they appear in the order you add them.
