    In settings I have operating hours entered. If all operators are offline the chat box displays the offline status “we are currently offline” but it does not display the offline message like the preview.
    It’s confusing because under the We are currently offline it reads “Hi there If you need any assistance, I’m always here.”

    OK so I see the message about emailing when offline does not appear until the visitor actually starts a chat.

    Yes, you’re right. The offline message will appear if a customer tries to contact you via the chat when you’re offline.
