With the Yoast SEO plugin, you can manually specify og:image tags for each post, through the plugin under the Social tab and adding the alt attributes at the same time. You should ensure that your primary og:image is between 1200x800px and 2000x1600px, and is less than 2mb in size. Thanks @maybellyne, but I am looking for a way to do this programmatically, using a filter, and not by setting this manually thru the Social tab. Possible?
