1) Can I change a value to reach many more (unllimited please) for a specific article category ? If yes, please how ?

No, you can’t show unlimited. The page would never load successfully, and any one with on lower speed internet would not be able to see them. I would not suggest that. Keeping things limited with a number will keep the site neat and clean, and also keep the loading performance in check.

2) I’m sure you can help… but how or where to translate this buton ? My site is Fr_ca, so it should been translated yet, but it’s not the case now !

Is this the WordPress interface that needs translated? Or is it your actual site? Please share a little more information to help me understand.

Hummm, I’m confused now! like you can read… i’m newbie! So I thought Shortcode = a plugin… I read the article you refered to, but i’m mixed-up now! Where and how do I use this [shortcode] from a menu trigger ?!

Well again, i’m confused, but I think more of the Theme (interface) then the site (core)… I can tell that all the dashboard GUI is in french and OK, I cant also tell that I can read :

Actually you can, using the Infinite Scroll feature in Jetpack. I see you already have that enabled.

But that won’t work if you have footer widgets on your site – adding footer widgets automatically overrides Infinite Scroll, otherwise there would be no way for people to reach your widgets on the posts and archive pages.

If you don’t care about the widgets being accessible on those pages, try hiding the widgets for those pages using the widget visibility settings in the Customizer. If that doesn’t work, you’ll likely need to make a change to Jetpack itself to override this behaviour.

Sorry about the confusion there. The display posts shortcode is not actually a Core feature. You can add it by installing the Display Posts plugin, but I don’t believe it’s really a solution here – the shortcode uses its own styling, so the posts won’t display the way posts normally do on your theme, and the shortcode has a fixed maximum limit of 100 posts it can display.

So it could be that those are Core strings that aren’t translated yet:
