Option to send email to fixed address

  • How would I go about modifying this plugin, so if the user clicks a checkbox then the email is automatically CC’ed to a fixed email address.

    For example, I want a ‘copy admin in on email’ option, so if the user selects this, then we get a copy of the email as well.

    Is that doable?
