Options for quizzes

Is there a way to select different options for different quizzes. Sometimes I want it to mix up the questions and sometimes I don’t. In addition, I would like to vary the amount of questions that are asked for each quiz. It seems the options are for ALL the quizzes i generate, I can’t have different options for the different quizzes?
