Order Pick Up

Is it possible to include within your plugin the option of an email for when an order is ready for collection/ pick up? This would be when pick up is chosen as the shipping method.

I know this is a shipping plugin but just wondered if you could do something like that. Given woocommerce doesn’t offer a collection of order email, stating that it is ready for pick up.
