Just to confirm, the product had the stock updated, correct? It was not that the customer was able to back order it, right?

Do you have any plugins that interfere with the stock?

Furthermore, I’d like to understand your site properly. Please share with us the necessary information below for us to investigate the issue further:

System Status Report which you can find via WooCommerce > Status > Get system report > Copy for support.
Fatal error logs (if any) under WooCommerce > Status > Logs. Then you can use the selector to search for Fatal Errors.

Thanks for sharing additional information.

I checked your system status reports and noticed you use the WP Activity Log plugin. Did you install it before or after the incidents occurred? Also, does it show any activity related to the stock update?

Additionally, do you have any third-party services or plugins managing your stock and sales, perhaps through an API?

Has there been any cancellation or return of orders involving this product? The stock might automatically increase if a product is returned, cancelled, or failed.

Furthermore, does anyone else have access to your account? It could be that someone else with access to your site has made the changes using your account.
