Overlay theme – homepage

Hello,
I’m very sorry to sound incredibly slow – I’m new to WordPress and am trying to quickly learn how to build a website.
I downloaded the Overlay theme and the pro theme (naively I thought I could use the homepage literally as it looks in the theme download section and customise it with colours etc).
I can’t (for the life of me) make the homepage look like a decent homepage. I’m using the block system when editing the page and I just can’t understand how to make it look similar to the theme’s homepage demo/example.
I’d like a banner section at the top of the page, followed by a section to add some small icons. The website is basically a microsite that will have a media library, for users to download educational resources.
I even tried editing the colour of the separator underneath the homepage’s title, but when I update the changes, the colour remains the same as before I edited it. When I preview the actual block (separator) it shows the correct colour I wanted it changed to, but in preview mode it reverts back. I’m not sure if this is something to do with the theme not allowing the colour to change?
Anyway, I’ve searched online for YouTube tutorials or any help on Overlay and how I can amend the homepage it make it look more slick, to no avail.
I work for a small charity, so don’t have a huge budget to spend on lots of plugins etc.
Anyone have any ideas, or links to useful materials that I might be able to try? I know I’m probably asking something really annoying – I do apologise.
