Override functions in mep_functions.php

I would like to override some of the functions in mep_functions.php, eg mep_get_event_total_seat() which is written as a pluggable function, but I can’t override it as the plugins get loaded before the child theme functions.php.

How do I override pluggable functions in the mep_functions.php file?
