Override "Variation out of stock" output message.

I’m trying to change the output in my theme to change the default text output when a variation is out of stock.
By default it says “Variation not in stock”
It would be nice to have a longer message, followed by a “Would you like to be notified when this item is back in stock?”
Does anyone know any way of doing this?
