or in your header.php (or wherever your nav bar is coded) you can adjust the wp_list_pages call to exclude certain pages

One last question

For the exclude plug-in, do I only upload the exclude_pages.php (file) or the entire folder? I believe it’s just the file but want to make sure before moving forward.

I haven’t used, but most plugins its the entire folder (unzipped)
(or just install through your admin interface)
