I am sorry to say once the course is purchased then it will be accessible as long as the students are allowed to. If you want to stop providing them access after completion. You need to do some steps manually.
Lets say a student enrolled onto a course name maths. When the user completes the maths course from your tutor lms pro enrollment options you can see the list of the student or students who completed the maths course which is a paid one. Once they have completed you can un enroll them from the course using the same tab (the enrollment option) there you will see the option to delete the student from the course. Once you delete them they will need to buy it again in order to complete. This is one way of doing this. However i recommend not to do this as this might create many confusions.
