I understand the code itself and can probably get it working. But it’s unclear to me where I should put it. Do I just paste it right into stripe-checkout-pro.php? Or do I create a new file in the plugin directory?

You shouldn’t modify core plugin code unless it’s the only way.

The most common method is to add snippets like these to your theme’s (or child theme’s) functions.php file. Here’s a good article to get started:

Less common, but a preferred method by myself and other developers, is to create a custom plugin with any code snippets so it can be easily toggle on and off and is completely independent of the theme. Here’s the starter plugin that I usually use:

One more thing…a separate redirect filter makes more sense in your case actually since you’re only adding querystring variables (not changing the base URL).
