Payment settings are confusing

Hi there,
Two questions:
1. I’ve set deposit amount per service to 100% (basically I want to collect full payment for all services and packages) yet I still see pay later option which is thoroughly confusing.
2. Is there any way to add a custom payment? We have have things like email transfers, all I want to do is add a line to say please email money to xxx email address
3. Can I set appointments as tentative (not approved) if paying by xx payment method i.e. onsite for example?
