Personalised variations based on subscription

I would like to limit available variations on a single product based on a field in the user subscription. We have a market where people book a table based on their skill like woodworking, crochet etc and these tables are limited. We have a case where people are choosing the wrong table type of theirs is sold out, making more work for us.

What I’d like is to only present their table type as a single option, and if out of stock they get the waitlist option.

Is this possible at all?
