Woocommerce provides plugin of its own to edit the checkout field see

instead of using a plugin just add this code to your childtheme functions.php

add_filter( 'woocommerce_billing_fields', 'my_optional_fields' );
 
function my_optional_fields( $address_fields ) {
    $address_fields['billing_phone']['required'] = false;
    return $address_fields;
}

Finally, you could also just use the WooCommerce settings for the phone field as found under **Appearance > Customize > WooCommerce > Checkout > Phone field** by setting that to “optional” ??
