piping to send to different user, how to get both value

for example
[select your-subject “Request for reading”|”[email protected]”][your subject] will retrieve the “[email protected]” only that i can use in receipient
but then my subject field in email that send to others can only use a hardcoded constant string like “Enquiries”/”Request”.
