When I activate the plugin the load order of the CSS files inside the functions.php is altered by placing the normalize.css at the end of everything, this provokes a css override of my theme.

What is the name of the CSS file which loads last? Is it normalize.css?

The plugin doesn’t load this file but it does load a SASS bootstrap file which will only apply to elements inside a .newsletters class.

I look forward to your response with more details, please.

In the meanwhile, we are checking here to see that all the plugin’s files are loaded before the theme’s stylesheet and that the loading order of nothing else is changed.
