[Plugin: Contact Form 7] Selectable Recipient with Pipes – 1st Select No Value?

I followed a long with these instructions: https://contactform7.com/selectable-recipient-with-pipes/ – Everything works, but I need to get the first line to say “Select Recipient”. Obviously, there cannot be an email attached to this.
Does anybody know how to make this possible?
