These changes can be done at Events > Settings > Formats/Layout > Events format > Single Event Page.

The only exception is the map size. That should be modified by changing the CSS of your them or even better, child theme, so those changes you made don’t get overridden when you update the main theme. To make your own child theme easily, try the One-Click Child Theme plugin.

If I make these changes in the plugin settings (Events > Settings > Formats/Layout > Events format > Single Event Page) to, for example, remove the category display, do they get overwritten if I upgrade the plugin? My guess is no, but I want to be sure.
