This is quite a strange issue that no one has ever reported, and it will be technically difficult to jump to a conclusion without some extensive troubleshooting steps.
First of all, can you confirm if you have any sort of automatic update set up for our plugin? That could be a very possible reason behind the issue because if the automatic update encounters any errors while running, it might not complete the process and thus keep the plugin not-updated and deactivated. Another easy guess regarding the reason for the issue would be a conflicting plugin/theme containing faulty code, which might cause the plugin to deactivate itself in specific and rare scenarios.
Lastly, I think it will be better to enable debugging in WordPress, which might help us narrow down the possible sources of the issue. You can enable debugging by following the guide here: https://developer.www.ads-software.com/advanced-administration/debug/debug-wordpress/.
After enabling debugging, you’ll have to wait for the plugin to deactivate itself again (hopefully, it never happens) for the debug.log file to fill itself with the error logs. You can share the debug.log file once it fills up.
