[Plugin: SimpleMap Store Locator] List of locations sorted by category?

I’m hoping to use SimpleMap for a tourism website, and am trying to figure out how to generate a list of locations sorted by category to drop into a sidebar. Something like this:

• Stay

• Hotel 1
• Hotel 2

• Eat

• Restaurant 1
• Restaurant 2

• Drink

• Bar 1
• Bar 2

Etc.

The idea would is that the location list would initially be hidden, and that clicking on a category in the sidebar would expand the list of locations underneath and generate a search, with only the locations matching a particular category would display.
