    Will I be able to copy some of those codes that I see in the source code of the webpage and put into my blog?

    No. Not in general. In response to your question:

    How do I find out what plug-in are used in some of those showcase site… finding out what theme is used.

    Knowing how to view source code allows you to see the file paths, and usually the names of the plugins, theme or scripts in use.

    Your first example doesn’t seem to be a wordpress site. Your second is. You want to visit the site, view the source code and look for or use the search feature in your browser, to find /wp-content/plugins/ which will reveal the name of the plugins being used in most cases. The same method applies to finding the theme name. You can look for it in the source code.
