You didnt understand what I am asking for:

WHERE in the theme I have to change the code?
I do absolutely find nothing where I would be able to switch to german. Where or how do you call the function?

The proper way is to:

1. Download the German localization file to your site
2. Read the How do I change the Date Picker configuration? question on the FAQ
3. Look at the localization documentation on jQuery UI and configure it to your specifications.
