    No, you should not edit the database manually. Just control it through some php code when to display or not display it.

    I want to have some content pages that weren’t blogs but I’d have to build the content off from WP if I couldn’t leave the dates there

    It seems you are looking for what exactly the Pages feature does in WP.
    You can put content in those Pages and you can have them without date, time whatever…
    In order to achieve this you have to create a page.php template in your theme. Look at how it was done in the Default theme that comes with the downloaded package. Remove/add the template tags you wish and once you have your customized Page template, just go into the admin panel > Write > Write Pages and create new and new pages.
