Possible to disable cart/checkout?

You can use the https://woocommerce.com/products/catalog-visibility-options/ extensions to remove e-commerce functionalities and turn the store into a catalog.

On a single product page (https://whisperartandobject.co.nz/product/art-8/), can the “enquire” button go to an email address or maybe the contact page?

This custom code should be added to your child theme’s functions.php file or via a plugin that allows custom functions to be added, such as Code Snippets. Please don’t add custom code directly to your parent theme’s functions.php file as this will be wiped entirely when you update.
