Post types and Taxonomies

  • I have a WordPress Seo 1.7 by Yoast, and I am not sure about settings for post types and taxonomies part.

    Post Types list the following ones:
    Posts
    Payges
    Media
    Layouts
    Layout parts
    Highlights
    Portfolios
    Slides
    Testimonials

    Options here are:
    noidex,follow (on/off)
    Show date in snippet preview? (on/off)
    Hide (on/off)

    Taxonomies section, lists the following items:
    Categories
    Tags
    Format
    Highlight categories
    Portfolio categories
    Slide categories
    Testimonial categories

    Options here, are the same, for all items and are:
    noidnex, follow (on/off)
    hide (on/off)

    Can you explain shortly what all of these are, and what settings should I use (and why)?

    As an aside, I am not using any of them, at all. I am just using, regular post types, and pages, sometimes. I am not even sure about the Media type.
