Pound Sterling symbol

Hi. When our email notifications come through confirming the amounts in the calculations, the pound sterling symbols are always replaced by a diamond type symbol with a question mark inside. We have used the html email option as we want to layout the notification email nicely but we nevertheless have this issue. Have tried various fixes but ultimately no joy. Please can you advise?
