Preferred day and preferred time

Hey,

On my website I’m selling products, which only get sent out, if a specific amount is reached (e.g. 50 sold units).
This means, that the delivery day can’t be planned in forward. But it can be approximated.
But it’s important for the product to select a preferred day and preferred time, because the product is perishable.
What is the best solution for this? Is it possible with this plugin, to block e.g. the first 3 weeks, which are approximated to reach the 50 sold units?
