Preferred Delivery Date Missing From New Order Emails

We would like customers to be able to choose a delivery date when ordering. This option appears at the checkout, and you are able to select a date from the calendar.
We have 3 woo commerce shipping zones for customer options:
Free collection
Free local delivery within 10 miles
Or £1.50 charge for customers further than 10 miles.When a customer selects either of the free options the preferred delivery or collection date appears on the “you’ve got a new order” woocommerce notification email. Great ??
BUT.. if they choose the 3rd option – and pay for delivery, then the preferred delivery date is NOT shown???
Any ideas why that might be??
