Prevent Orders from automatically going to “Completed” Status after Payment

How can I Prevent Orders from automatically going to “Completed” Status after Payment?
We sell physical products and need orders to go into “Processing” status after successful payment so that we have time to add the shipment tracking info and then mark it as “Completed” manually ourselves.
But for some reason, all orders are automatically going to Completed with your plugin.
What can we do to fix this?
PS. Emails are automatically going out too as a result that say “Tracking info” because Woocommerce thinks it’s a completed order… except it’s not really completed yet. Hence the need to go to “Processing’ first.
