Hello.
You can make the “blank bookings” for the specific dates at the Booking > Add booking page in admin panel (for making these dates as unavailable).

Or in the Booking Calendar Business Medium and higher versions you can use the season filters. Please read more here: https://wpbookingcalendar.com/overview/#availability
