Problems with Categories

I am pretty new to all this. Am working on a site pcrcaz.com. Tried to put categories in place. Changed Uncategorized to Upcoming Events. It showed for awhile but is gone now. I did have to delete some pages and maybe that impacted it. Also it said ‘Archive’ at one point. Any way to clear all of it and start over??? Thanks
