Product Catalog, List Items But Prohibit Purchase

Hello. I’m looking to find a plugin where I can list my products all on one page (paginated would be great).

I am building a site for my Boss who is a jeweler and we want to list his Diamond Engagement Rings on one page which will NOT be for sale online (users must schedule an appointment to view/buy the ring), but I’ll also be adding a shopping cart to list his Engagement Ring Settings (they come without the diamond so are a lot safer to sell online).

Anyone know what I can do, or use?

Or if there’s an eCommerce plugin out there that will allow me to select an option that doesn’t allow the item to be placed in the cart and purchased?
